Guest guest
Someone wrote to me that they have always had problems when eating pickles. I used to have this same problem, but I was eating the commercial pickles. I hated them, they made me so sick. When I began fermenting my foods I came across some information regarding lactic acid. Just like vitamins, lactic acid comes in two forms " L " form meaning the left molecule and the " d " form meaning the right molecule. The lactic acids the body recognizes as food is from the L molecule. Some of the commercial lactic acid is made from a cheap source and is the " r " molecule. So, this would make sense as to why we had different reactions to the pickles. Today I make my fermented veggies, pickles, drinks, meats, and I have no problem with any of my fermented foods. In fact they seem to help with digestion. I ferment big batches of veggies and share with my parents. My dad (81 years old) says that it helps with his heartburn!
