I've found the same thing. I've never got bloated or ill feeling from potatoes, and sweet potatoes esp. are loaded with good stuff. What is also interesting is that potatoes seem to be different for cows too. Our meat distributor (who is not anti-grain feeding especially), says it's hard for farmers to get " well marbled " Longhorns. Because, " Longhorns won't eat the grain -- they go clear down to the bottom of the bin and eat the potatoes and won't eat the grain, and how can you possibly fatten a cow on potatoes???? " . I thought that was in interesting comment: apparently in her world it's a " known fact " that you cannot make cows fat on potatoes, but you can on grain. Goes into my " facts I don't know what to do with " bin. I think the folks who simplify the carb issue into " grams of carb " are missing some of the facts though.
