They also sell a " kraut board " that has a special blade made JUST for sauerkraut (I forget where I saw it, but a search should find it). Goldmine also sells Harsch Ceramic Pickling Crocks for making larger amounts of sauerkraut. (Radiant Life also sells these crocks, but I don't know about the slaw board.) They say, " Our [sauerkraut] secret (besides the fabulous Harsch Ceramic Pickling Crocks) is this wooden cabbage slicer. With three adjustable metal blades and a guide that easily holds a full head of cabbage. You'll be amazed how fast you can slice. The blades are removable and can be sharpened as needed. " Here's the description for the crock: " In normal crocks, air, bacteria, and bugs can get into the top layers of the pickling vegetables and spoil them, creating an awful mess. Harsch crocks, however, are designed with a special grooved rim: The lid fits into a water seal, permitting fermentation gasses to escape, but preventing harmful air-borne bacteria and pests from entering. We've been using Harsch crocks fo 17 years now to make our famous unpasteurized organic sauerkraut, and haven't had a bad batch yet! " The crocks come in 2 and 4 gallon sizes, for $160 and $180. Guest guest Posted August 8, 2002 Report Share Posted August 8, 2002 Hi y'all, My 2 cents is that I have tried all the methods of shredding cabbage that have been mentioned and would like to suggest another one. The food processor way is kind of a pain because you have to empty the barrel every minute or two to empty it. For the jar method of sauerkraut that's ok. But we do the Harsch crock method (which is much better for bigger/longer fermentations) and find that when shredding 8 heads of cabbage you just need something more efficient. We tried out the slaw board and found it cumbersome and time consuming, plus it turns out that the slaw board is fairly difficult to clean and maintain, requiring oiling after each use or it will rust (which ours did even though we were careful). The solution we chose cost a more than the slaw board but less than a good Cuisinart. It is the slicer/shredder attachment to the Family Grain Mill. What's nice about this is that it acts like a " salad shooter " and sends the shredded kraut (gives you different coarsenesses to choose from) into a bowl so you can literally do 8 heads of cabbage in under 10 minutes. It's really easy to clean as well. I would recommend this system even if we didn't sell it, because not only is it a slicer/shredder but it also can come with grain mill, oat flaker, and meat grinder attachments. Anyway just wanted to " throw that in the crock " for you all.
