Thanks to Dean, a list member who posted an interesting article regarding kefir (well a commercial kefir anyways), which part of that research involved pH level readings of volunteers before and after taking kefir. It was revealed that kefir lowers the pH of fecal matter by app. .3 of a pH. Note that when talking about pH, there are different crucial pH levels to be maintained in different organs of the body, and within different areas of some organs (e.g. the stomach). I believe that maintaining a slightly acidic pH in the large bowel e.g., is a good thing. This slightly acidic environment is known to be unfavourable for C. albicans e.g. on the other hand, favourable for Lactic acid bacteria and friendly yeasts.
