I hope that doesn't sound stupid, but I don't know the difference, I'm just beginning to use animal sources after 10 years. The reason I ask is I was blending some heavy whipping cream a while ago and I thought I had blended it to far for the recipe I was using it for. The thought passed my mind if I let this go it would look like butter. I had added vanilla and maple syrup into mine, so I'm sure it wouldn't have tasted like butter though. Just wondering, Robin <<Take a fresh, sealed, bottle of raw cream and through it in the blender or kitchen aid mixer for 5 minutes on high and you can't go wrong.
