I just put some aside for waffles for tomorrow, and then it occured to me perhaps I should be using a dishtowel rather than plastic wrap, to let air circulate (and to be less wasteful). The idea was that lactobacilli are probably aerobic bacteria since they don't smell awful. What do you folks think and what do you use?
