Guest guest Posted August 14, 2002 Report Share Posted August 14, 2002 Some people use a two step method for kombucha, first brewing it-it needs air for this part-hence the towel or other cover to let air in and keep bugs and stuff out--I use 2 coffee filters held on my jar with a rubber band. The next step some take is to bottle it up to increase the fizz-I haven't tried this yet. Regarding this and the exploding bottles people talk about please note the following message from the Kombucha list: I think I'll use the PETE bottles if I ever getting around to bottling my kombucha, I like it fine now but it's not very fizzy. -- " The reason bottles break when the KT is sealed up is due to leaving air space in the bottle when it is capped. Any air space will cause a problem with pressure. This is one place where Number 1 PETE plastic bottles work well. The bottles will swell up and not burst like glass will. These bottles are commonly used for water and soft drinks. I have had KT sealed up in these bottles for 2 years. The carbonation is so fine that it is similar to champagne, the taste is along those lines too except in my case they are a little sweeter than any champagne I have tasted.
