A lot of people have trouble with grains --not only gastrointestinal

disorders but problems with mood and autoimmune disorders. As part of a low

carb WOE I found that my old gastric reflux is gone. When you realize that we

evolved eating very few grains until the agricultural revolution -- the lack

of grinding stones in the stone age makes a definite statement -- they never

had enough to bother -- it's no wonder that grains might be problematic. I

use almond flour for 'baking' needs. The grain and carb issue are not one and

the same -- but for those who have developed any degree of insulin

resistance, carbohydrates in too great a quanity can be problematic. Quick

and dirty way to know if you have insulin resistance -- are your

triglycerides above 150, is your HDL lowish (below 50 for a woman); do you

carry weight at the waist line??
