For those who have an interest, there was a great article done lately in

the New England Journal of Medicine, that has a good writup on the reaction

involved with celiac. Not that everyone has it, but there was some

discussion earlier about celiac just being a reaction to too many starches,

and this article has a good handle of the exact reaction involved (which

isn't bacterial or related to " refined flour " , it's a gene-protein reaction

-- the refining and bacterial issues are separate topics!).

It's a PDF, so you need Acrobat reader, which I'd guess everyone here does
