soaking oatmeal

I would like to start soaking my oats before cooking. Does anyone

know the water/grain ratio and how long it's suggested I do this.

Should the pan be covered? Also, I have candadiasis and react to the

sugars in milk products - are there ways that work without milk

products? Thanks.

I do a 1:2 ratio (1 c. oatmeal to 2 c. water) with a couple of tablespoons of

yogurt or whey. I let it sit overnight and then it cooks up in about 5 minutes.

I don't like my oatmeal too soupy, so if you want it more like porridge, add

more water. I think Sally reccommends lemon juice for the whey/yogurt for those

who can't tolerate dairy. Don't know how lemon will go with oats, though...let

us know.

ps-if you have leftovers, you can add eggs the next day and make fried

oatcakes-yum!
