Ed --->sigh...true although deep-fat fried french fries had the highest amounts - i wonder how low-heat potatoes fried in a heavily saturated oil (CO) compares to all those commercial products they tested that are typically cooked in high PUFA oils. not sure if the *oil* makes a difference or not. High PUFA consumption is associated with cancer and is quickly oxidized, so maybe there IS a difference...(purely conjecture on my part) My diet contains mostly steamed and boiled veggies (or raw), but these CO fried hashbrowns are so yummy! but even saturated fats can oxidize which is why i try to eat any fried/sauteed food in moderation, and never re-use oils. If I remember correctly, dry biscuits had very high levels of acrylamides. The media played up the deep-fried aspect, of course, but really it seems to have more to do with starch and high temperatures than anything else. Deep frying just allows for higher temperatures. However the problem is worse for deep fried potatoes, french fries and potato chips. Dr. Mercola also advocates a diet that is 50% raw and very low in grains and root vegetables.
