I presume " harvesting " means removing the kefir grains from one batch so you

can make the next batch of kefir. The kefir I drank today was quite thick,

but recently with warm weather the kefir has tended to separate into curd

and whey before 24 hours has past. I still haven't figured out everything

about kefir. It's never as thick at the Stonyfield plain whole milk yogurt

I buy, but maybe that has pectin in it.
