Fermented foods are very safe, and lactic acid (which is naturally occurring in homemade fermented foods) is a preservative. There are a lot of articles on the web about this. I was like you when I first started fermenting, not sure. After a while you just get to where you trust what you are making is safe, especially if you are like me and love the taste. When fermented foods go bad, you know it as they stink and in many cases you will see a bacteria growing on top.
