I haven't tried them. Startches generally have a higher GI than fructose, which is common in fruity fruits. I suppose frying them might help, but bananas are a high-enzyme fruit, so it would probably be better to eat them with a meal full of fat, and eat them last, after the fat, so the enzymes are still in tact and you still have the fat slowing down the GI.
