RE: Converting the sceptics WAS homemade jerky

Hi Heidi,

Can you keep us posted on the results of this chocolate experiment? Also

does anyone out there have an NT acceptable recipe for something that is on

the order of granola bars--trying to find good snacky foods for the kids.

For whatever it's worth here's a progress report on the slooooooow dietary

conversion of my hubby.

I'm still in the process of slowing trying to NTize our entire diet. We're

doing pretty good, but my husband has been slow to convert. He's the

ultimate skeptic (and sweet tooth). He is making progress though which I

sometime fail to see because it seems so slow. After a hiking outing that

he packed the lunch for he told me about his adventures and I begin to see

that he is listening and trying to change. He was looking for juice and he

said it took him forever to find something without high fructose corn

syrup--but he persisted. He got fresh fruits and veggies. He got roast

beef for sandwhiches and wanted rolls to put it in (I have not come up with

a bread the kids will eat and usually give them ezekiel bread at home but

hubby won't eat that)he couldn't find any he wanted and ended up with Wonder

bread (Yuch) although he new this isn't what he wanted he got it instead of

making a new trip. Than he wanted beef jerky--he said and I quote " I just

wanted it and I purposely didn't look at the label because I knew if I did

there would be something bad in there and I didn't want to know " Hey this

is great progress and I'm cracking up because he got Pemmican brand jerky

which is " 96% fat free " (No suet in this stuff--had a good chuckle over

that). I'm just now working on my beef jerky so hopefully will come up with

something everyone will like. I try to remember that I'm going against the

great wave of popular culture and that can be slow going and small successes

need to be celebrated. So thanks for being part of the place I can

celebrate my small successes.

Thanks for sharing! We have similar adventures. Amazingly, everyone

around here is sort of on board (no lectures about my high-fat diet).

We have the added issue of gluten -- it pretty much cuts out most items

in the grocery store anyway.

My " heart jerky " just is not as good as the round roast jerky. But you can

tell your husband that the REAL jerky (once you get it down) is SOOOO

much better than store bought! I was in heaven with my first batch. I

did cheat and used Montreal Steak Seasoning for spices, but salt,

garlic, and pepper would do the same thing.

I'll let you know on the chocolate. I never ate much, but my favorite

Sees, is out now for gluten issues. But VNCO chocolates, that could

be nice ...
