Making kefir is about as easy as falling off a log and definitly as easy as hitting the ground after you fall off the log. And getting a group of starter grains is also really easy. Guest guest Posted August 24, 2002 Report Share Posted August 24, 2002 --- Sheila I've made it using powdered capsules although I have no proof any of the bugs in the powder actually made the yogurt cause any combination of lacto fermenting bugs in the milk (raw) acidified the milk. The microorganisms (viable) actually doing the work (acidification?) are very sensitive to temperatures and other environmental? things. You'd have to identify the bugs in the finished yogurt to be sure all those are in kefir and/or yogurt. I have doubts that all those organisms someone listed as present in kefir could be in one and the same batch(ie in one environment/batch/jar). You could leave the milk/powdered lacto capsules in the refrigerator for a longer time to see if it'll set up in a week or so. I'm betting it will. I imagine you dissolved the capsule powder in cool milk which would probably be best, right. I will let it sit a few more days in the refrigerator and check it again. I thought this was a smart way to taylor make yogurt. Perhaps the Solaray multidophilus powder I used is not up to par. I just noticed it reads non dairy, freeze dried, so maybe the non dairy part might make a difference? Dr. Mercola stated that many brands are near useless. He recommends Flora Source. I just opened the caps, made sure the powder was not clumped together, stirred into cold milk, put the container back in the refrigerator and about 3 days later I had thick, creamy yogurt. Then I used that yogurt to make my next batch. Maybe I got lucky and the particular capsule I had was active. Your experience might show that some of the probiotics that claim millions or billions of live bacteria might not be true. Good luck! I was concerned about getting the bifidus bacteria, because it is supposed to be especially effective in protecting the large intestine. I could not find any research, not even on Dom's web site, which showed bifidus as part of the kefir culture. I hunted around for a brand of aciddophilus which contins bifidus and am giving it a try for yogurt making. Can you recommend an active aciddophilus that would be easy to find at a health food store?
