I keep it in the freezer so it doesn't go rancid, and the fat really works for energy. Dear list members, Thank you all for your suggestions for my hypoglycemic sons snack. I made jerky with round stake, fermented soy sauce and sea salt. I will add cheese with it and we will see what happens. I am figuring out ways to keep fresh proteins to last: 1) freeze a bottle of filtered water the night before and include it in with the protein. 2) Maybe I will try freezing the protein and sending it to school; it should thaw by lunch time.
