Guest guest Posted August 26, 2002 Report Share Posted August 26, 2002 Coconut oil stays solid at room temperature until the air temp gets " tropical " --in the 80s or so, then it looks like baby oil--clear and liquid. What brand of CO are you using? My Tropical Traditions smells gorgeous before and after cooking: a slight coconutty smell. It does take some getting used to--eggs and coconut don't automatically go together IMO. I keep a bit out to use and the rest goes in my fridge. Guest guest Posted August 26, 2002 Report Share Posted August 26, 2002 Coconut oil does not have to be refrigerated however should be kept covered or in the dark away from direct sunlight as should all your oils and fats. If the oil is solid and you need it to be liquid all you need to do is run the closed jar under hot water at the sink for 30 seconds or so. Coconuts spend most of their lives living in the sun on top of tall trees in really hot weather -- I don't think refrigeration is an issue. I was confused by the coconutty smell but after awhile it seems normal (and delicious), just like one tends to associate bacon smell with breakfast. I have found that when mine melts and hardens many times that the " higher temp " oil tends to coagulate at the bottom, and it melts at a higher them, which seems weird but it does not hurt anything. So it can happen. I am not sure how long it takes though. but since I don't go through it that quickly I figure it is safest to leave it in the fridge.
