Because we (people who want it) are a captive market. The overwhelming majority of dairy available in the US is pasteurized and from grain-fed confinement cows, and in many states it's illegal or extremely difficult to sell raw dairy. If the campaign to legalize raw pastured dairy ever succeeds on a wide scale, prices will come down somewhat, though it'll probably always be more expensive than subsidized crap at the grocery store. - Quote Link to comment Share on other sites More sharing options...

There are a few reasons. In many states, raw dairy products are a black-market item, and with black-market status come black-market prices. When someone can have his farm taken away for selling raw butter, he's not going to do it for $5/lb. Besides, it's a niche market.
