Guest guest Posted August 20, 2002 Report Share Posted August 20, 2002 I just made a new recipe this evening and thought I would share, it is sort of like potato pancakes except with zucchini: 2 c shredded zucchini 1/2 c soaked grain (I just took 1/2 cup of wheat soaked half and half with kefir out of my big bowl) 1/2 c shredded cheddar cheese 2 T grated onion 1/2 t dried basil or oregano 1/2 t salt 1/4 t pepper 2 eggs lightly beaten combine ingredients and fry in a skillet with melted butter (I put some butter after each set of zucchini pancakes I made because I did not want the cheese to stick) cook on each side. They are a little flimsy because the cheese is all melted inside. serve with creme frache. Grace, a Augustine I wish you enough sun to keep your attitude bright.
