I have made the ginger ale a few times and the raspberry orange drink and

had the same thing happen. I just scooped the mold off and am still drinking

them. If there are ill effects i don't notice them. I think i remember

reading in the book to do that and only if the smell is really offensive

that you shouldn't drink it.

Subject: Moldy Beverages

I made 2 of the beverage recipes from NT, Ginger Ale and Punch, and after

day 1 and day 2 I have mold growing on the top of both. Just a few small

patches of white fuzzy stuff. I washed the jars very well before using them

and covered them tightly. Does anyone else have experience with making

these drinks, and does anyone know if the mold is good or bad??

White and fuzzy sounds like mold (Not good, throw it away), white and flaky

is yeast (Just part of the process).

Thanks, I think I will try again with the ginger ale, alot of little spots.

However, I might skim off the 2 spots on the Punch and try it. I made salsa at

the same time with no mold problems, so I wonder why I had mold on the

beverages.

I have read many times that when people used to make crock sauerkraut and

pickles a layer of mold would grow on the top and was just skimmed off. Maybe

this is normal?

I am sending for kefir culture right know so I will try it with kefir whey when

I get a chance.

I asked Sally about this once (as I got mold on my beet kvass). She

said if it doesn't bother you, just lift the mold off with a spoon.

If it worries you, throw it out and try again.

(BTW, it worried me! Also, the mold wasn't floating on top, it was

on the sides of the jars & thus, difficult to " lift off. " I'm going

to try again using kefir whey this time.)

One thing you can do is use kefir whey -- it seems to depress mold a lot. I

have not had luck with any other kind of whey (same problem: I get mold).
