Hi folks,

What kind of " acidic solutions " should raw fish be marinated in? Does lemon

juice work? Since fish and lemon kind of go together that seems like it

might taste good. Also, how long should they be marinated in?

I'm thinking of trying this as my first homemade raw meat dish, before I move

on to steak, since I've had sushi once before and thought it was pretty good.

Ceviche (marinated raw fish) is traditionally made with lime juice. I also add

whey to mine. The fish will turn opaque and look " cooked. " I also recommend

gravlox--salmon cured in salt, sugar (or sucanant), vodka, and dill. NT has

many raw fish recipes.

Smoked, salted, pickled, yes.
