Thai Kitchen's large can (14 oz.) used to be available pure. Its now called

premium with guar gum added as an emulsifier. Their pure around here anyway is

now only available in 5.5 oz. cans which are the size of a small tomato paste

can. Yes, the labels do say pure or premium. Theres a light version too.

True, that was a warning to not pick the wrong label. <g> The light must

have a

portion of the fat removed for those afraid of saturated fat and who want to

cook as authenticly Thai as possible.

The lite version is much thinner. More like the consistency of regular

milk. It is good for making hot cocao.
