I tried some smoked mackerel which I bought in a plastic wrapper that tasted very good. Does anyone know if the smocking process destroys the enzymes in Fish. Guest guest Posted September 18, 2002 Report Share Posted September 18, 2002 Don't know if smoking would be hot enough to destory the enzymes, but it would introduce many harmful carcinogenic compounds into the meat. If you want to introduce more enzymesinto your diet (a very worthwhile thing to do!), eat more fresh pineapple (bromelain-organic or it could be gentically engineered), Kiwi fruit (actinidin- organic, not imported as it will be irradiated), fresh figs (ficin- dried will have no enzymes unless sun dried- imported may also be irradiated) & slightly green pawpaw or papaya (papain- again organic, as genetically engineered are already on, or soon will be, the market. Unpasteurized fermented foods are great too. A company in the states also makes a fantastic vegetarian enzyme formulation which i would be happy to give the details of. Important to know that most enzyme supplements are useless. Papain once extracted from papaya dosen't activate in the body. Many manufacturers use ripe papaya, which is silly because all the enzymes are gone once its ripened. Bromelain also dosen't activate in the body once removed from the pineapple. As for animal derived enzymes, well personally i prefer not to use them, as i'm sure they're not derived from organically reared animals. Chris PS the green papaya is particularly good as it digests protien in ANY PH, thus those lacking in hydrochloric acid can use it.
