We have a bunch of Jalapeno and Habanera peppers that we need to do something

with. What is the most nutrition-keeping way to preserve? Should we dry, can

or freeze? And any tricks to successfully preserving with whatever method?

we'll use the peppers mostly for a concoction that we make for immune support

that calls for fresh peppers.

In oil in the fridge. I chopped up the peppers and put them in a short jar. Then

mixed with some olive oil and poured some olive oil on top of the peppers and

close the jar. Then I put them in the fridge. This is not true preserving in iol

technique but I did not want to use so much olive oil for all the peppers I had!

This lasted a year in my fridge. You can then take them out a spoonful at a time

and use them, but make sure you cover them back up with oil or they will mold.

Don't they caution against garlic in oil because of the danger of botulism.

I'd think that peppers in oil might be the same thing. Maybe I'm remembering

wrong.
