As a hypoglycemic myself, I strongly suggest that you include some fat in those snacks. Jerky, being made from very lean beef, might not quite do the trick, though it'll certainly be far, far better than regular snacks. I've been meaning to try making pemmican, as it seems like the ideal snack for those with blood sugar problems. I make mine with fat beef -- I don't know if that would be acceptable to a kid though. I keep it in the freezer so it doesn't go rancid, and the fat really works for energy. Something about the dried protein with out any fat seems to react like a carb in my system. Perhaps it is different with your son. Also many jerky's have honey or other sweeteners used to flavor them which exacerbates the problem. I found the best snack for hypoglycemia is cheese. protein and fat and lasts for hours without refrigeration.
