I know I need to let the milk sit and then skim the cream, but does anyone have a best way to do this? And then what makes it X-factor, or what is done differently to make the butter the way Dr. Price did? This comes from cows fed young, fresh grass, and the color of the cream is a fairly good indicator of the activator X content, the more yellow the better. -- Berg bberg@...
