Stevia

I use stevia in some things. It's hard to substitute for sugar because it

has no bulk, and it also has it's own taste, and gets bitter if too much is

used. My experience is that it's good for some things, not for others, and

you have to just do trial and error till you figure it out. I like it in

oatmeal with a little bit of honey and cinnamin. I was making a halfway

decent vanilla yoghurt by adding a pinch of stevia and a half teaspoon of

vanilla to a bowl of plain yoghurt. And I made a delicious glass of lime-aid

(I didn't have any lemons) during the summer after work once by squeezing out

one lime, adding a dash of stevia and one teaspoon of rapdura, and ice cold

water. Yum!

" What can one say of a soul, of a heart, filled with compassion? It is a

heart which burns with love for every creature: for human beings, birds, and

animals, for serpents and for demons. The thought of them and the sight of

them make the tears of the saint flow. And this immense and intense

compassion, which flows from the heart of the saints, makes them unable to

bear the sight of the smallest, most insignificant wound in any creature.

Thus they pray ceaselessly, with tears, even for animals, for enemies of the

truth, and for those who do them wrong. "

We have sources for stevia powder in the " links " . We just added Trader

Joe's to the list of sources.

I haven't seen bulk stevia for sale anywhere (yet), but I did recently find some

powdered stevia in a medium-sized jar at Trader Joes's for around $4-5. I've

also carried around a small glass dropper-bottle containing liquid stevia

extract (mostly used for my iced tea) for a few years.

You might want to check the manufacturer's Web site, which is

http://www.cvc4health.com for specific info, but the label says that

there is " some " lactose in the product.

According to the label, there is less than 1g of carbs per 1/3 tsp.

serving. However--and this is the kicker: The label also says that

that 1/3 tsp. is 876 mg, BUT there is only 22.8 mg of stevia extract

in that 876 mg. So maybe it's mostly lactose? Hmmmm...

I still have the bottle, unopened, on my counter; I haven't given it

the " taste test " yet. I'll let the group know if it does NOT work

well as a cooking ingredient.

Cyn,

i checked the website and found no further info.

now i think i understand why most people don't

like "Stevia." if they are getting the same product

you got from trader joes....what does that work out to,

about 3% actual Stevia.

do you have a Whole Foods store anywhere near you?

if you can't find any 100% Stevia, i would be glad to

send you a sample.
