The recipe says to soak the cooked cake in a whey/lemon juice/ 1/2 cup honey mixture and let is set out for 1 to 2 days. Why is that? Isn't it fermented enough? I am reluctant to do this because it sounds too sweet and honey is expensive! Just wondering if i should do it anyway if it will make it more digestible.
