Guest guest Posted September 13, 2002 Report Share Posted September 13, 2002 One of the first recipes i tried from NT was crackers. They were a flop -- actually they were hard as granite. I had to dry them three days in the oven and that was a pain too. I bought some Allos amaranth crackers that i really like. Of course, i doubt they're fermented and i would like to make some that are. Has anyone had luck making crackers? What is the secret? I like the cookie idea! I will try that. I think i will also just look in my Joy of Cooking and ferment the dough then make some cheesy snacks. Anyone have an idea what sorghum is in German? I did make some by making a thin sorghum dough with kefir, and spreading it on an Exopat, and baking it on low. It's a real trick to get them crispy without being burnt though. What kind of crackers do you want? I was looking for a Wasa type. There are lots of recipies for " crackers " on the net: mostly it's a thin dough. Or use a cookie recipe without the sugar and " sweet " spices (substitute cheese and savory spices, and you are mostly there). High-fat crackers are easier than low-fat yeast-based crackers.
