I bought some yesterday b/c the beef liver packages at the store I went to were really big and too much money, and they had buffalo liver in smaller packages. It cost more money, but it must be lighter, b/c it said a half a pound, but was at least a pounds worth of beef liver in volume (unless there was a labeling mistake). Also, it was range-fed, and although it was " all natural " and not organic (all-natural is almost organic in a health food store compared to commercial meat), the beef-liver was organic and didn't say, so probably grain fed. Anyway, I took it out, and it _looked_ better, and it had a much less slimey texture so was a lot easier to cut. I fried it up, and it is actually pretty good! On a pure enjoyment test, I would still go for hamburger or steak, but it doesn't seem to have _any_ of the unappealing qualities that beef liver has in terms of taste and whatnot. I was really surprised by how good it was. Since buffalos are ruminant and it is pastured I assume the nutritional content is comparable to beef liver.
