I've made several birthday cakes with it and I dare anyone to tell the difference between it and the regular variety. Its delicious. Not sure where to buy a gf cake if you are looking for bakery-made, but Marina Sousa was diagnosed with CD, she's the famous cakemaker that was on Oprah. The boxed GF mixes aren't bad...the main difference with our GF cakes is that we use sorghum flour instead of potato starch. We've found that potato starch gives GF cakes a more gritty texture, and sorghum flour - while it is more expensive - makes for a better product. Sorghum is also a whole grain and provides more nutrients than potato starch, which can be an issue with GF diets as most GF flours are not enriched.
