You can replace potato starch with corn starch or arrowroot.

Both Bob's Red MIll and Pamela's GF baking flour mixes have potato

starch. :( Namaste makes a couple of flour mixes that don't contain

potato starch.

Thanks Ruth Anne –

I just tried one today by Namaste and added ground almonds and flax

seeds and my girls loved their pancakes. It is soy, dairy, gluten, potato

free.

Would still love to find a mix in greater bulk if anyone has

some ideas?

Cara,

Our flour mix is free of potato starch, it contains rice flour, sorghum flour,

and tapioca flour. We've found that potato starch leaves a gritty texture in

gluten-free baked goods, which is why we went with sorghum flour...it's more

expensive and harder to find, which is why you won't see it in many commercial

products.
