I recommend the hotel restaurants or better table service restaurants. Call the reservations hotline and book breakfast and dinner reservations - even same day reservations can be done if things aren't too busy. Tell them you need gluten free for every reservation. Ask for suggestions if you have no idea where to go, and the person on the phone will hook you up. When you get your table, confirm with the wait staff that you need gluten-free options, and they will go get the chef who will cover all your options. If you can't get a reservation ahead of time, but do wind up in a restaurant, just tell the front desk or your server that you need gluten free. I had a chef come and talk to me at every dining venue. These guys were on task! Also check with the information desk in each park, right by the entrance. I know Disneyland in SoCal has a printout of everything gluten free in the resort, and I'm almost certain that Florida has the same program. Handy for snacks, impromptu meals in the parks, etc. All the character breakfasts will have gluten free pancakes and many have mickey waffles. My favorite breakfast place was Cape May at the Yacht Club Resort. Favorite dinner place was the California Grill (I know - the irony of going to Florida for a California restaurant) in the Contemporary Resort.
