Many recipes call for 2 tablespoons of flour, which some menus call "flourless". 2) Was the cake pan floured? The Sweet Things Bakery (Tiburon) has a flourless "Fallen Angel" dark chocolate mousse torte that is phenomenal. It is $34!!! for a 9-inch-diameter, two-inch-high dense torte covered in chocolate flakes, but it is delicious. The only place I know to get it so far is the Sweet Things Bakery and its small store inside of the Cal-Mart at 3385 California St. in San Francisco. I called Sweet Things about how they prepare it, since they are a 99% wheat bakery. The person said that, no doubt, there is wheat flour in the air, but they thoroughly wash the equipment, tools, and separate area before preparing the Fallen Angel. So far, my wife and my daughter have had no problems, though, in my wife's case, the symptoms would be long-term, specifically anemia.The person at Sweet Things said the Fallen Angel may also be available to the food industry (restaurants, etc.) through Gourmet Express in Millbrae. I did find out that Hindquarters Bar & Grill in Santa Cruz has it. I talked to the chef, Sam, there, and he said there are a lot of dishes and a lot of things they can do to ensure a GF experience.
