As far as the GI issues, it depends on the person. I get the GI issues BAD, and for three days straight, with mild GI issues for a few weeks after a glutening. You may find, as I did, the longer you are GF, the worse the GI symptoms get. FYI, the BEST thing I have found for a glutening is KeVita. It is a probiotic drink that can be found at Whole Foods (or Rainbow) – usually near the kombucha. I get the ginger lemon flavor because I know ginger is good for the digestive system, and I figure after a glutening I can use all the help I can get! Fortunately or unfortunately, I don’t have an immediate or acute reaction to getting glutened but because my antibody #’s were still quite elevated after going gluten free for a number of months, I decided to stop eating at PF Changs altogether. I do remember that some time ago (over a year ago) we had a discussion on this list about PF Chang’s that centered on problems at the Palo Alto restaurant; at that time several people had bad experiences while others had eaten there without a problem. It seemed as though some cooks were more careful or better trained than others. None of the messages in the current discussion specifically mention the Palo Alto PF Chang’s. I’m wondering if anyone has eaten at the Palo Alto PF Chang’s recently (within the last 4 months or so) and what their experience was?
