I went to several restaurants, including non gluten free ones and they ALL knew what gluten was. I can imagine Boulder is the same, but personally haven't been. Here's a list I made before I left. Snooze was amazing, as well as City O'City! Besides Snooze (great g-f pancakes!), we ate at Fogo de Chao (most of the menu items are g-f, including their Brazilian bread - cheaper if you eat lunch there versus dinner), Ling & Louie's (Chinese food - g-f menu) and Abrusci's which is a little outside Denver, but so, so worth the drive (an Italian restaurant that has a HUGE multi-page g-f menu including ravioli, spaghetti, pizza, etc.). There were two restaurants that highlighted my trip... The Squeaky Bean in Denver (go for brunch! it was aaaamaaazing. The roasted cauliflower salad, polenta style grits with pancetta, olive oil poached eggs, yum!) and The Kitchen in Boulder. We went to the Kitchen for their happy hour menu, which had smaller plates and shared a bunch of items with friends. The roasted veggies are the best I have ever had. Neither restaurant have a gf menu but their servers were knowledgeable and I felt comfortable.
