Butter would be a fine alternative, it will just have a more buttery taste. You could also substitute a non-hydrogenated palm oil shortening like Tropical Traditions (http://www.tropicaltraditions.com/organic_palm_shortening.htm) for a vegan option that won't alter the taste. It's just important to use some kind of fat, even a liquid oil could work if the recipe is not already too liquidy. This is a great one. All of our family and friends love them too and when baked after being rolled out and cut with cookie cutters, they hold their shape pretty well.

Anyone ever tried the sugar cookie recipe on the Pamela’s Vanilla Cake mix package? It is incredibly simple – I think you just add butter and water or milk to the packaged mix, refrigerate, roll, etc. It works remarkably well for something so simple. I keep a roll in my freezer and slice off a few round cookies to bake and frost whenever needed.
