SilPat is very useful, I think. In my limited experience, silicone baking cups have been wonderful for releasing little GF baked goodies, which can be much more fragile than those made with gluten. I think you just need to find out what adjustments, if any, need to be made for heat and timing.

hi all,

i'm a novice when it comes to gluten-free baking. i'm wondering if it's okay to use silicone baking dishes or silicone cookie mats (like the silpat) for gluten-free baking? i tried it once and it horribly burnt my cupcakes. i was just given some more cupcake silicone cups and i'm wondering if i should return them and get a traditional metal pan?
