Evening Alison -

Only NSF rated silicon mats can be used in a commercial kitchen. Subway,

for example, has custom-made silicon baguette trays. I have used them at

home in both gas and electric ovens. A baking stone helps distribute the

heat evenly and will enable you to better work with your oven to get the

correct temperature and time for your breads.

I use silpats and various shaped silicone pans for baking quite often, without any problems.  Our oven is finicky, so I'm used to keeping a close eye on baked things, but haven't had an issue with things burning more often in them.  Silpats are great for sticky GF dough.
