It also says that total carbohydrates is 16.6 g (for 2 TBS) but, as I understand it, the fiber can be subtracted from that in order to arrive at the effective carbs. The yummy blueberry muffins that I make with it have 3.5 grams fiber, 2 g. effective carbs, 4 g. protein, and 132 calories. I'm addicted. So far I haven't made anything with coconut flour that I consider more than just barely edible, I've made nothing even remotely good, let alone yummy. What brand do you use? I think I got this recipe from on this list: (this makes 12 muffins) 6 eggs (room temperature. this is important but what I do to hurry it along is to place the eggs in warm water and they're ready as soon as I've gathered the other ingredients). 2/3 cup coconut flour (I've been using Aloha Nu) 1/2 cup melted coconut oil 1 tsp vanilla 1/2 tsp. salt sugar substitute equivalent to 1/2 cup sugar. (I use 1 tsp. liquid vanilla flavored Stevia) 1 tsp. baking powder 6-10 TBS. water (I use 8) 1 cup blueberries (if frozen, defrost by placing in strainer and spraying with warm water). Preparation: Heat oven to 375 deg. Spray muffin pan (I use an olive oil PAM) 1. Whisk or beat the eggs until well-mixed. Add salt, vanilla, and liquid sweetener. 2. Add dry ingredients - baking powder & flour 3. Now stream in the melted oil and whisk till well blended (doesn't take long) 4. Add water 2 TBS at a time. You want it to be able to slide off the spoon but thick enough to hold the berries. I've settled on 8 TBS but I also make sure I use enough of the flour by tapping the measuring cup to settle the flour when almost filled - then adding a tad more to finish. 5. Alobar, were you eating it by the Tablespoon? One muffin made with coconut flour and no sugar only has 2 gr. effective carbs.
