I get a reaction similar to when I'm glutened but not quite as bad so I'm wondering if there's something else I'm reacting to? Since they do not use any gluten ingredients, (1) one of their ingredients has been contaminated in the manufacturing process; or (2) they bake in a non-dedicated-gf facility; or (3) people are reacting to something else. I think it's important to figure this out by speaking directly to the owners of the bakery. Looking forward to hearing more. I haven't had any kind of reaction, but I'm only sensitive to gluten. You should call and ask them about what's in what you ate. There may be something you're not used to eating. Guar gum provokes reactions in some people, for example. She attributed her reaction to xanthan gum and guar gum so possibly it could be ingesting a quantity of baked goods with the " gums " as she calls them, made you have a reaction. I don't know if they use them, but it is found in a lot of gluten free products. You might ask next time if they have anything without those ingredients.
