I have gluten-free 101 cookbook and the bread receipes call for Soy Letchin and my daughter and I cannot do Soy. Does anyone know of a replacement in the bread receipes for the soy letchin?

I don't use any in my bread with my bread machine and the bread is fabulous! Let

me know if you'd like the recipe. It can also be adapted to bake in an oven vs.

bread machine.

I have used the bread machine twice now and yesterday the bread was not done in the middle and the bottom. Last time I used the soy lecitin and it was only still undone in the middle. The book says use less liquid. I would love HELP.
