I had the wonderful experience of going with my family and friends to Noci, figuring I would probably not have ice cream myself because there always seems to be the possibility of cross contamination with the serving utensils, then finding to my delight that they offer gluten free waffle cones. This prompted a conversation with the owner, a young woman who has celiac and is completely on top of everything celiac. The only gelato they have that contains gluten is the ubiquitous cookies-and-cream, though the owner steered me away from the gelatos immediately surrounding the c-and-c because some of it splatters a little when being served. The containers of gelato are always placed in the same position, so you don't have to worry that some flavor that's now far away from the c-and-c had been next to it the day before and thus glutened. (It's too bad they carry c-and-c at all, but it's a popular flavor...) All the gelato containers have their own serving utensil and if someone orders c-and-c and another flavor on one cone or in one cup, the owner explained to me that she and the other servers always scoop the gf gelato first, to make sure they don't gluten the serving utensil. (One thing I didn't think to suggest was that they place the cookies and cream at the end of a row, so there would be fewer gelatos potentially cross contaminated...)

The owner is also very sensitive to the needs of people with other food allergies and she and her employees can tell you exactly what goes into each flavor, which don't have eggs, etc. They also have many sorbettos, which are dairy free and well as gluten free.

I had the salted caramel gelato and it was delicious. The best part, however, was the gluten free waffle cone, which had as a nice surprise chocolate in between two layers of cone. Incredible!
