I use schniders or Maple Leaf here in Canada and you can buy it in a large sort of tube. Approx 1 lb or so depends on how much you need re; how many people. You can also buy plain sausages and squeese the meat out of the casings. Just a regular store or deli brand. Nothing with a lot of spice in it like maple syrup tho. celery chopped Onion chopped poultry seasoning or sage. Break up the sausage meat and brown in a pan. Add onion and celery and cook until they are soft. Then you can either continue and put it in the oven in a corning dish or stuff the turkey with it. It's how I've always done my stuffing and you can find sausage meat that doesn't have sugar in it or very little. Read the ingredient list and get the one that best suits your sensitivity. Can't really tell you amounts. I do it by flying by the seat of my pants but don't be too light with the poultry seasoning or sage but by the same token try not to overload. Say for the 1lb sausage approx 1 -2 tbsp. some where in that range. Cheers Sue Do any of you have a good source for healthy thanksgiving recipes?
