Coconut milk/cream in powder form (instant gata in the Philippines)

Dear forum participants/members,

 

Very recently, there were several inquiry postings on coconut milk in this

e-forum, particularly, on the the best/better way of packaging coconut milk or

cocomilk (in cans, in tetrapacks, etc).  For dairy milk,the most practical and

acceptable way/technology is in tetrapack as globally practiced, usually largely

done by producing countries.  In the Philippines, imported dairy/cows mostly

come from New Zealnd and  Australia, the country being quite close to the later

countries.

 

Going to the subject of coconut milk,  if some of you are not yet aware, there

is another manner of  preserving fresh coconut milk and this is by spray drying

technolgy developed decades earlier.  Spray dried coconut milk powder is

reconstituted into liquid coconut milk by the addtion of  safe and clean  water

(preferably hot) which can be used to make various food preparations (beverage

drink, cooking, dessert, among many others. Let us remember that the whole

(full) coconut milk is an emulsion of coconut oil (lauric fatty acid-rich) and

contains some of the soluble componentsof the coconut meat/kernel.

 

In stores in the Philippines and in your places (check if available), there are

two kinds, powdered coconut cream and powdered coconut milk, the former more

expensive than the later, for reason of higher quality (more concentrated or

higher coconut oil content).  We also have powder milk imported from Thailand,

Malaysia/Singapore in our many known hyper/super-markets in Metro Manila and

large cities/provinces.

 

Finally, it known that powdered coconut milk has many advantages (reason why the

product has demand): less storage space, bulk packaging at reduced cost and

longer shelf life, users need not have access to market of fresh nuts by storing

packages of powdered milk, among many others.
