After fresh coconut meat is de-fatted, the coconut meat residue is dried and ground to become coconut flour. Some produces white coconut flour from white meat, others brownish coconut flour from whole meat. Yellowish coconut flour is an indication of possible exposure to high temperature during drying. Guest guest Posted December 13, 2008 Report Share Posted December 13, 2008 , From what i know, the producers of the expeller pressed coconut oils are the ones producing the coconut flour.
