Guest guest
Mochi - little pieces of " squishy " " marshmallowy " heaven: 1 cup sweet rice flour 1 cup water 2/3 cup sugar (a little less, a little more depending on what sweetness you want) Corn starch 1. Cover a cookie sheet with corn starch. 2. Combine the sweet rice flour, water and sugar in a microwaveable bowl. Stir ingredients until mixed. Cover bowl with plastic wrap and cover tightly. 3. Microwave ingredients for 2-3 minutes or until mixture is somewhat solid and not runny. 4. Take bowl out of microwave and very carefully remove plastic wrap (it will be hot!). Pour contents onto corn starch covered cookie sheet. 5. Dip your hands in cool water to keep dough from sticking to your hands. Allow dough to cool slightly then pat the dough until 1 inch thick. Let dough sit for about 3 minutes. 6. Dip your hands again in cool water and flip the dough. Brush any excess corn starch off dough. Pat dough into somewhat of a square. 7. Dust corn starch on knife and cut dough into bite-size pieces (1-2 inch pieces). 8. Let the little pieces breathe and cool off for a while and then save in a plastic bag opened a little on the top for air. Mochi is good for about 4 days. You can top ice cream with them, frozen yogurt and my absolute favorite - peanut butter. You can also add a flavoring like lemon extract (or any flavoring) before microwaving. You can also flatten the little cut squares and add a little spoonful of blueberry pie filling and pinch the sides together. There's just something about the texture and taste that got me hooked on them. Enjoy! It is the best frozen yogurt place around! I know of only two locations at this time – in Santana Row (San ) and in Stanford Shopping Center (Palo Alto), but more locations will be opening soon in San and Santa Clara. Pinkberry will be opening soon near Blossom Hill Road and Almaden Expressway in San – next to the new Whole Foods opening there. > > > > Over the past couple of months, we have tried other frozen yogurt places (Fraiche, Yogurtland, Yogurt Delite), but they don't compare to Pinkberry. Pinkberry's mango and pomegranate flavors are " to die for! " They have mochi (little rice balls), but Pinkberry's mochi is NOT gluten-free. I love Pinkberry's frozen yogurt with blueberries and mochi so much, that I found a very easy recipe and now make my own mochi (sweet rice flour, water and sugar) – takes me less than 10 minutes to make! Mochi doesn't have much of a flavor, and the texture is like biting into a little gummy candy. It just adds this yummy texture to the frozen yogurt, and I also enjoy a bit of it with peanut butter! > > > > Sue >
