Apparently the concentrations in various preparations can vary considerably, and, although it's overall toxicity is fairly low, one can develop argyria, or body-wide silver deposition within one's tissues from its use. Vinegar has been shown to slow gastric emptying, and this can stabilize blood glucose and insulin response to a meal, as well as help curb hunger. Don't know that it breaks down fat.
