Carrots are a perfectly good healthy food. Let's not become food-phobics.

If you want to replace with another high beta-carotene but lower GI food,

eat sweet potatoes.

Yes, carrots are healthy food.

Glycemic Carbs per Glycemic

Index serving Load

---------- -------- --------

Carrots raw: 47 6 3

Sweet Potatoes: 61 28 17

See: http://www.ovarian-cysts-pcos.com/glycemic-index.html

Raw Carrots have a lower glycemic index, fewer calories,

and a lower glycemic load than sweet potatoes on a

per-serving basis (and on a per gram basis also).

In the Internet table reference, raw carrots are rated the

food with the lowest glycemic load of any food listed.

Raw carrots are also the lowest carbohydrate per serving

food of any food listed. See URL table reference above.
